Cinnamon Pecan Monkey Bread

Photo property of McCormick.com

Who can resist ooey gooey cinnamon, butter, and sugar anything? Just don't start counting calories on this one please. My husband loves my homemade cinnamon buns but lets face it, that takes all day. While I won't say anything else comes even close to the taste of homemade cinnamon buns, this recipe is really good and you can make the whole thing in less than an hour including the baking time. In fact, this pull-apart bread is so irresistible, everyone will be clamoring for seconds.

Many years ago a friend scribbled this recipe on a notepad for me and I have been making it ever since. At some point I added chopped pecans but they are totally optional. I also think raisins would be good. You only need 4 ingredients, and it's really easy. In fact, I think it would be a great recipe to let the kids help with.

Get your ingredients together, there are only four! You start with 3 cans of biscuits. I like to use buttermilk and trust me, the store brand is fine.

Preheat your oven to 350 degrees and grease a 10-cup bundt pan

Mix cinnamon and sugar together in either a plastic bag or a large bowl

Cut each biscuit in quarters and coat each with the cinnamon sugar. If you used a bag you can shake a few at a time until coated or just roll them around the bowl with the mixture.

Layer the coated biscuit pieces in the prepared pan as you go. If using pecans you should sprinkle about 1/4 cup in the bottom of the pan first and then 1/4 cup after the first and second cans of biscuits. No need to add nuts after the last layer.

Finally, mix the melted butter with leftover cinnamon sugar mixture and pour over the top.

Bake for about 35 minutes or until golden brown

Note: for a change you can try either Apple Pie Spice or Pumpkin Pie Spice in place of the cinnamon.

Ingredients:
  • 1 cup sugar
  • 2 Tablespoons Ground Cinnamon
  • 3 cans refrigerated buttermilk biscuits (7.5 ounces each)
  • 1/2 cup (1 stick) butter, melted.
  • 3/4 cups chopped pecans (optional)
Directions:
  1. Preheat oven to 350 F.
  2. Mix sugar and cinnamon in a plastic bag or large bowl.
  3. Cut biscuits in quarters
  4. Put about 6 pieces at a time into the plastic bag or bowl to completely cover each one.
  5. If using chopped pecans put 1/4 cup evenly around bottom of pan
  6. Place biscuit pieces in a greased 10-cup bundt pan If using pecans sprinkle 1/4 cup evenly in the pan after 1st and 2nd can of biscuits. No need to put any on the top.
  7. Mix leftover cinnamon sugar with melted butter and pour evenly over biscuits.
  8. Bake about 35 minutes or until golden brown. Let cool in pan for 5 minutes. Invert onto serving plate. Wonderful served warm.
Hope you enjoy this easy and tasty recipe.
