Valentine's Layered Jello Squares



I thought a fun desert for Valentine's Day would be nice. This jello layered desert from HeatherLikesFood.com seemed to fit the ticket well. A refreshing and attractive dish, its really pretty easy to make but does take some time to allow each layer to set up before adding the next.

I was actually able to find fresh strawberries, maybe because of Valentine's Day, after all what says Valentine better than strawberries? Anyway it was delish!



Here's what I did...


Gather ingredients, only jello, strawberries, and plain yogurt. I used Greek Yogurt but you you can use regular yogurt or even sour cream.


Bring 2 cups water to a boil and mix in the darker jello, in this case the raspberry.


Put one cup of the mixture in a separate bowl and add 2/3 cup plain yogurt. Make sure the yogurt is at room temperature first, it will look a bit lumpy at first will mix in nicely after a bit. If the yogurt isn't at room temperature you may have a problem getting it mixed together.


Pour the jello and yogurt mixture into a smooth 9" X 13" pan. Put in refrigerator until set. For me this took about 45 minutes.


Take the remaining jello and add 2/3 cup water to it. Heat it up a little if it has begun to set. Pour this on top of the first layer. Place pan back in refrigerator until set.

Repeat the process with the strawberry jello but you will make one change when you add the fourth and final layer.

Cut the strawberries into "hearts". Secure each heart onto the third layer by putting a dab of jello on the back of each one and placing it where you want it. If you don't do this the strawberries will move all around when you move the pan.

Cut a small notch in the strawberry to create a heart shape.









Once the berries are secure on the third layer of strawberry jello and yogurt, add the final mixture of strawberry jello over the strawberries. Put back in the refrigerator for a final set.







Cut, serve, and enjoy!


Ingredients
  • 1 (6 oz) package Raspberry Jello
  • 1 (6 oz) package Strawberry Jello
  • 1 1/3 C plain Greek or regular yogurt (room temperature)
  • 4 C boiling water
  • 1 pint fresh strawberries, cut into heart shapes
Instructions
  1. Start by combining the raspberry jello with 2 C of boiling water, and stir until dissolved. Remove 1 C of the mixture and set aside in a separate bowl.
  2. Combine remaining mixture with 2/3 C room temperature yogurt and whisk until smooth. Pour into a 9x13" pan and place in fridge to chill until set, about 30 minutes.
  3. Take reserved gelatin and warm slightly if it's become thick. Stir in 2/3 C water and pour over first layer. Place in fridge to chill until set, about 30 minutes.
  4. Repeat this process for the remaining box of jello. Before pouring final layer, place heart-shaped strawberry slices on the 3rd layer in desired pattern. To keep strawberries in place, brush the backside of each slice with a bit of the final layer of gelatin before placing.
  5. Pour final layer of gelatin and place in fridge to chill a final time, at least 3 hours.
  6. Slice and serve.
