Overnite Oats with Chia



You may already be familiar with my Overnite Oats in a Jar recipe (if not see it here). I love this very simple and healthy way to prepare an easy ready to go breakfast.


But now I've stepped it up a notch...by adding Chia Seeds. Chia Seeds have been growing in popularity over the last few years due to their high protein, omega-3 fatty acid, and fiber content. Not only are they loaded with antioxidants, but the added value of their vitamin and mineral content have caused them to be labeled a superfood. Chia Seeds have been called the healthiest food on the planet because they are loaded with nutrients that can have important benefits for your body and brain.



One word of caution, never try to eat Chia Seeds dry. Dry seeds absorb up to 27 times their weight in water and begin to form a hydrogel capsule immediately after being mixed with liquid. While this works great for healthy recipes, the resulting gel-like ball could result in an esophageal obstruction. So just don't try to eat them dry, okay?


Today I used regular whole milk and Pumpkin Pie Spice. I made two jars and used a different honey in each. I have made this with other flavors of yogurt, just make sure it goes well with the fruit you are using. I like the frozen bags of mixed fruit, especially the mixed berries. A bit of frozen banana is a nice addition too.

I use two tablespoons of Chia Seeds but you don't have to add that much if you don't want to. The more you add the thicker your mixture will be. Do try to add at least one tablespoon for optimal health benefits.


Single Serving:
  • 1/2 cup rolled oats
  • 1/2 cup Honey Greek Yogurt (you can substitute other flavors)
  • 2/3 cup milk, or coconut milk or almond milk, etc.
  • 1 teaspoon honey
  • 1/4 teaspoon nutmeg, cinnamon, or other spice
  • Teeny pinch of salt
  • 1/2 cup fruit (frozen works fine)
  • 2 Tablespoons Chia Seeds. (You can use less)
Directions:
  1. Mix all in a pint size glass jar or other container that has a good fitting lid.
  2. Shake and/or stir it all together.
  3. Put in refrigerator overnight.
