Melt in Your Mouth Parmesan Chicken Breast


Looking for an easy dinner recipe that is still sure to please? You can have this main dish ready for the oven in no time and let it cook while you unwind....did I really just hear you laugh? Okay, let it cook while you get something else done. lol


The chicken turns out so moist and juicy and the cheese and seasonings give it that great winter comfort food taste.

The mayonnaise makes the chicken breast very moist and tender!


BTW, it was a rainy day today and I didn't have any fresh Parmesan and didn't want to go out. So I cheated and used the shake out of a container kind. Certainly not the same, but still good. I was also out of seasoning salt so I made a quick batch (see how at the end of this post). I changed it up just a bit from a recipe on food.com.

Use these ingredients for two people.
  • 2 boneless skinless  chicken breast halves
  • 1/2 cup mayonnaise or Greek Yogurt
  • 1/4 cup freshly grated Parmesan cheese
  • 3/4 teaspoon seasoning salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 Tablespoons Italian bread crumbs (optional)


Or double for more:
  • 4 boneless skinless chicken breast halves
  • 1 cup mayonnaise or Greek Yogurt
  • 1/2 cup freshly grated Parmesan cheese
  • 1 1/2 teaspoons seasoning salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/4 cup Italian bread crumbs (optional)

Directions:
  1. Preheat oven to 375 degrees F
  2. Line baking pan with foil for easier cleaning and spray rack with non-stick spray. Use a rack that will let air circulate around the chicken.
  3. Mix mayonnaise, cheese, and seasonings.
  4. Spread mixture on chicken breasts so they are completely covered (all sides).
  5. Sprinkle both sides lightly with bread crumbs and place on rack in baking pan.
  6. Bake at 375 degrees for about 45 minutes or until meat thermometer reads 165.
  7. Let rest for 5 or 10 minutes before serving.

Note: You can cook the chicken without the rack but it won't be crispy on the bottom.



To make your own seasoning salt just mix all the following together and store in airtight container. I use a 4 ounce canning can.

  • 1/4 cup kosher salt
  • 4 teaspoons ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground red pepper
