Fresh Fruit Salad for Memorial Day (with Watermelon, Blueberries, and Feta)


This salad is so simple and refreshing. The red and blue fruits with white feta cheese make it perfect for Memorial Day or Fourth of July celebrations. Make it the night before if you like, just don't add the dressing until the last minute!

Ingredients
  • 1/2 seedless watermelon, cubed (about 8-10 cups)
  • 1 cup blueberries
  • 1/4 cup crumbled feta
  • 4 teaspoons fresh mint leaves, chopped
  • 1 lime, juiced
  • 2 teaspoons olive oil
  • 2 teaspoons honey
  • 1/4 teaspoon sea salt

Instructions:
  1. Combine the fruit, mint, and cheese in a bowl.
  2. Whisk remaining ingredients to make the dressing.
  3. When ready to serve, lightly toss the dressing into the salad. (Then serve immediately)
